Steel Cut Oats

Oatmeal. It's just oatmeal, right?
WRONG!
It's amazing, the best, yummy, creamy, fruity nutty, mind blowing breakfast, ever. Did I mention I set it up at night and it means NO cooking before work? Serious.
It's simple at dirt and flexible to your tastes and seems impossible to ruin.

The Best Overnight Oatmeal.
This makes 4 servings (for your family, or its good for a few days in the fridge too.)

4 Cups of water
1 Cup of Steel Cut Oats (Bob's Red Mill seems above and beyond the rest)
2 Tbs Ground Flaxseed (for nutritional benefits and taste)
Around a Cup of mixed dried fruits, seeds, nuts or frozen berries.
For example: Dried apple rings (rip into smaller pieces), dried peaches, dried cherries, dried or fresh cranberries, fresh/frozen blueberries, dried figs, raisins, prunes, sunflower seeds, pumpkin seeds, sesame seeds....to your hearts content.

1) Put everything in a pan that has a lid.
2) Bring it to a boil on the stove.
3) Stir once, to make sure it didn't stick on the bottom.
4) Turn off the stove.
5) Put the Lid on.
6) Walk away. come back for it in the morning. Voila! the oatmeal is perfect, the fruit absorbs all the moisture and is so juicy, it always floats to the top too, its funny. Just heat it up and you have a really nutritious breakfast, I like to serve it with homemade nut milk on top, maybe banana. You really dont need more sugar sweetener for serving if you have all the fruit in there!

Yes, it is safe to leave out at home, especially in cooler winter weather. Don't put any meat or dairy into it and you have nothing to worry about, silly! Bon Appetit!
